ingredients

2 sirloin steaks (approx. 220g/8oz each)

2 Tbsp soy sauce

30g (1oz) brown sugar

2.5cm (1in) ginger, minced

3 cloves garlic, minced

½ onion, finely chopped

2 spring onions (scallions), finely chopped

1 small pear or apple, finely grated

1 Tbsp sesame oil

1 tsp freshly ground black pepper

1 Tbsp sesame oil

4 Tbsp doenjang

2 Tbsp gochujang

1 spring onion (scallion), finely chopped

1 Tbsp mirin

1 tsp honey

1 tsp toasted sesame seeds

1 Tbsp sesame seeds, to serve

cos (romaine) lettuce leaves, to serve

1 large carrot, peeled and cut into matchsticks, to serve

½ cucumber, cut into matchsticks, to serve

Trim the fat from the steaks, and thinly slice into 2mm (1/12 in) strips. Set aside in a bowl.

Mix together the soy sauce, brown sugar, ginger, garlic, onion, spring onions, grated pear, sesame oil and pepper in a small bowl. Add to the beef and stir well. Leave to marinate for 15–20 minutes.

Meanwhile, make the ssamjang sauce by mixing together the sesame oil, doenjang, gochujang, spring onion, mirin, honey and sesame seeds.

Heat a large frying pan or wok until smoking. Place the marinated beef in a colander, and give it a good shake to remove the excess marinade. Tip it carefully into the smoking hot wok, and stir-fry for 2 minutes for a medium steak or 3–4 minutes for a well done one.

serve

Scatter the beef with the sesame seeds and serve immediately with the lettuce leaves, ssamjang sauce for dipping and carrot and cucumber sticks.
